EVERYTHiNG WE MAKE IS FROM SCRATCH

Pablo’s Pizza was inspired by Pablo Picasso who forever changed the art world with his revolutionary creations. We hope for the same sort of impact on your taste buds!  

PHiLOSOPHY

We feel that eating pizza should be intertwined with the best parts of life: exploring, learning and loving. We have confidence that our establishment will meet our customer’s needs on a physical, emotional, and spiritual level. No person’ s life is ordinary. We hope that our pizza will become part of every extra-ordinary life that graces our world.  

LOCATiON

Pablo’s Pizza Grand Junction is the original Pablo’s and is situated in a historical building amidst the quaint shops, hotels and other restaurants on the tree-lined Main Street.   We currently have one franchised location in Fruita, CO.  

The Grand Junction Owners

Paul and Kaci Knaysi opened Pablo’s Pizza in October 2000, after 3 years of planning and research. Paul and Kaci had been working as a medical social worker and a physical therapist respectively. Tiring of the medical field, they decided to go into business for themselves. After exploring different business options, they settled on pizza, as they felt that it would be fun to own a pizzeria and allow for creativity. Of course it helps that almost everyone loves pizza! Their philosophy has been to be as extraordinary as possible. They firmly believe that if you think outside the box, the world is a lot more interesting. They have 3 children that help out in the store with various chores and jobs!  

The Fruita Location

Dawn and Terry Davis purchased the Fruita location in 2012 and have been slinging dough since!   Terry also builds homes in his “spare” time… They have one daughter who lives nearby..

Non-Profit of the Month
Every month, we select a local non-profit to support through our online ordering website.  Customers who order online can “round up” their purchase to the nearest dollar, and those proceeds go to the non-profit. We match 100% all of the money donated online through this program. February:  Loma Cat House (raising money for medical care, food and supplies for homeless cats).

Ramblebine and Palisade Brewery Beer!

  • We are exclusively carrying beer crafted in our lovely valley!  Ramblebine brewery and Palisade Brewery are making delicious beer for us!

New Menu!

Our 2024 menu is out!  We have added a new pizza (The Tater Swift) and refreshed the Antipasto salad with cherry tomatoes and banana peppers!
